During lunch my daughter told me about a chocolate shop in the mall that sells chocolate covered strawberries for $5 a piece. If the chocolate is sculpted to look like a rose it costs $20! I was shocked. “Do you know we can feed a child in Africa for a whole month for $20?” ~ Jennie Woods
The staple food in Zambia is called mealie meal which is finely ground cornmeal. To prepare it, the meal is boiled in water. This makes “nshima” which is eaten with wet hands and rolled into small balls. In my American view, nshima has absolutely no taste, sits like a rock in the belly, and adds unwanted inches to my waist and hips. To a Zambian, nshima fills the body with strength -- a meal without nshima is just not a meal.
Mealie-meal is also the only affordable food for the typical family whose earnings are often less than $50 per month. A fifty-pound bag of it will feed a family of four for a month and sells for about $19 --- less than one chocolate strawberry, sculpted to look like a rose!
